I baked these cupcakes for my friend Joanna’s birthday along with some extras for tonight’s knitting group at K1. Totally winged the recipe, but I did have the forethought to measure things just in case they were good, and I’m so glad I did. The perfect balance between dense and spongey, with the addition of lassi helping to keep them moist and cutting the sweetness with a little tang. I hope you like them too.
Joanna’s Cupcakes
Made 40ish mini muffin size cupcakes and I’m guessing about a dozen full size muffins.
Melt together 4oz / 115g butter + 4 oz / 115g dark chocolate.
Beat together 3 eggs, 3oz / 85g light muscavado sugar, 2oz / 55g agave nectar, 6fl oz / 170ml lassi. Mix in the chocolate butter mixture and then fold in 6oz / 170g flour, 2tsp baking powder and 1oz / 30g cocoa.
Bake at 180 degrees c / 350 degrees f until a skewer inserted in the centre comes out clean. About 10-15 mins for this size.
Joanna’s loved Turkish delight for as long as I can remember so I was trying to go for that sort of flavour with these. It wasn’t perfectly sucessful but the rose water spiked buttercream was certainly very good and at least a little reminiscent of that treat.
So ridiculously pretty.
